Bread Science Updates

I’ve posted material I’ve learned since publishing Bread Science on a page of updates, here: https://twobluebooks.com/updates/

Simple Sourdough Starter

I’ve posted a recipe to create a sourdough starter using only white flour and water. This is a little simpler than the recipe in Bread Science. You can see it here: https://twobluebooks.com/simple-sourdough-starter/

Sourdough Starter Flowchart

I made this flowchart when trying to explain the cycle of keeping a sourdough starter to my students. I don’t know if it helps or hurts! Start at the left with “Friend gives you starter” and follow the top or bottom path. The PDF is here: https://twobluebooks.com/wp-content/uploads/2024/08/sourdough-starter-care-chart.pdf

Sourdough Starter “Chips”

Here are instructions for drying out sourdough starter to travel with it, or reviving it. If you got “chips” of starter from me at an event, these are the instructions to revive them: https://twobluebooks.com/sourdough-starter-chips/

More Recipes

I’m posted some recipes on my author website. You can see a list of them here: https://emilybuehler.com/recipes-videos/recipes/

All About Enzymes

For more details about how enzymes work, read an article I wrote, here: https://emilybuehler.com/wp-content/uploads/EnzymesOriginal.pdf

Bread-Making Videos

In spring 2020, my class at the Campbell Folk School was canceled. I used the time to make videos of some of the lessons I teach in the class. You can watch the playlist below, or go to the Youtube playlist here. Note, Youtube runs the ads without my control. I’m working on an ad-free Vimeo version!
